Meal prep is a great concept for working parents, but not practical for myself. That’s why I prefer to pack leftover dinners for my husband and myself to take to work for lunch. We’re both pretty bad at remembering to bring home our tupperware and by the time we remember, we would need a gas mask before opening the lid. Place 2 cups of brown rice in a rice cooker and prepare per instructions.
Brown ground turkey in a skillet.
Drain off any excess fat. There isn’t usually much in ground turkey.
Add 1-2 cups of water depending on the amount of meat you’re cooking and taco seasoning (recipe below).
I added a frozen medley of peppers and onions. Cover the pan and let simmer for 20-30 minutes for maximum flavor.
Heat up black beans in a small sauce pan or in the microwave (my way because it’s much quicker ;)).
While the meat is simmering, chop up your fresh toppings like tomatoes, avocado, green onions, and lettuce.
Once all your ingredients are prepped and ready to go you can create an assembly line. Place your Reynolds™ Disposable Heat & Eat Containers in a row and begin to add your rice, meat, beans, shredded cheese, salsa or fresh tomatoes, avocado, and green onions. Cover with provided lids.
A delicious and convenient dinner and week day lunch! At lunchtime, remove the lid and heat in the microwave. You can place the lid under the container once removed for extra sturdiness. Because they’re made from plant fibers they do tend to soften up, but still remain sturdy and in tact.
